Classic Buttermilk Pancakes

I found this great recipe on honeyandfigskitchen.com. With a slight modification, these are INCREDIBLE pancakes. Little frisbees tossed down from heaven, really. Pair with some fresh fruit and bacon and you’re all set for Sunday brunch. I like to make the dry mixture and keep it in a Ziploc in my pantry to make it all the more simple. 

Ingredients

  • 1 + 1/2 cups all purpose flour
  • 3 heaped tbsp. sugar
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • a pinch of salt
  • 1 egg
  • 4 tbsp. butter 
  • 1 + 1/3 cup buttermilk (or, I like to use 1 cup buttermilk, 1/3 cup whole milk)

Here’s what you do. First, whisk the dry ingredients together in a bowl. In a separate bowl, whisk the wet ingredients together. THEN, combine both the wet and dry mixtures. Be careful not to overmix, you want your batter to be somewhat thick (it’ll make them fluffier). If you’re feeling scandalous, add a drip or two of sprite to the mixture (it’ll make these bad boys fluff up like pillows). 

Put some butter onto your hot skillet and pour some batter on that bad boy. When it starts to bubble, flip it!

Place onto your table, and beware of sneaky littles. 

And leave it to Seth to load it up with syrup.
